2 tablespoons vegetable oil
- 1 onion
or shallot, finely chopped
- 1 stick
celery, sliced
- 1 red
capsicum, diced
- 150g
small cooked prawns
- ¼
cup flaked almonds
- 2 cups
cooked long grain rice, one day old
- ½
cup green peas, cooked
- ¼
teaspoon ginger, grated (optional)
- 2 tablespoons
salt-reduced soy sauce

- Heat
the oil in a large pan or wok over moderate heat. Add onions
and fry until soft.
- Add
celery, capsicum and prawns and fry 2 - 3 minutes to heat
through.
- Add
the almonds and fry 1 - 2 minutes.
- Stir
in the rice, peas and ginger and heat through.
- Stir
in soy sauce. Serve immediately.
