- 4 white
fish fillets ( eg. bream, flounder, snapper)
- 4 pieces
fresh or tinned fruit (eg. pineapple, peaches, mango)
- 1 -
2 tablespoons vegetable or olive oil
- 1/3
cup thick teriyaki sauce
- 1 teaspoon
fresh minced ginger (optional)
- 2 cloves
garlic, crushed
- 4 bread
rolls or buns
- butter
or margarine
- 4 lettuce

- Mix
teriyaki sauce, ginger and garlic. Set aside.
- Heat
BBQ, frypan or griller to moderate heat with 1 - 2 tablespoons
of oil.
- Add
fish and fruit pieces and cook each side 2 - 3 minutes or
until nearly cooked.
- Just
before fish is completely cooked through pour sauce mixture
over fruit and fish. Heat through but be careful not to
let sauce burn.
- Cut
rolls in half and either butter before serving or toast
first. For a slightly different taste, butter the bread
on both sides and then grill or BBQ.
- Fill
each bun with a lettuce leaf, a fish fillet and a piece
of cooked fruit.
