serves 4

  • 500g spaghetti
  • 1 tablespoon vegetable or olive oil
  • 1 onion, sliced
  • 2 cloves garlic, crushed
  • 2 tablespoons tomato paste
  • 425g canned tomatoes
  • 2 tablespoons parsley, chopped
  • 1 teaspoon basil
  • ½ cup dry white wine or stock
  • ½ cup water
  • 1 tablespoon salt-reduced soy sauce
  • 500g scallops
  • 500g green prawns
  • 1 cup squid rings
  • ½ cup black olives (optional)

 

  • Cook spaghetti according to instructions on the packet.
  • Drain and serve topped with marinara sauce with green side salad.
  • For the sauce: heat oil in a frypan and cook onion and garlic for 2 - 3 minutes over moderate heat.
  • Add tomato paste, tomatoes, parsley and basil.
  • Cook gently until mixture thickens.
  • Add wine, water and soy sauce and simmer for 2 minutes.
  • Turn heat to low, add seafood and heat for 3 - 5 minutes or until fish is cooked.
  • Add olives and serve.
