fish recipes

serves 4

  • 1 - 2 tablespoons vegetable oil
  • 1 onion or shallot, finely chopped
  • 1 stick celery, sliced
  • 1 red capsicum, diced
  • 150g small cooked prawns
  • ¼ cup flaked almonds
  • 2 cups cooked long grain rice, one day old
  • ½ cup green peas, cooked
  • ¼ teaspoon ginger, grated (optional)
  • 2 tablespoons salt-reduced soy sauce

 

  • Heat the oil in a large pan or wok over moderate heat. Add onions and fry until soft.
  • Add celery, capsicum and prawns and fry 2 - 3 minutes to heat through.
  • Add the almonds and fry 1 - 2 minutes.
  • Stir in the rice, peas and ginger and heat through.
  • Stir in soy sauce. Serve immediately.
